RWH is focused on fighting the inequalities women face in agriculture and stands on the belief that income controlled by women benefits community development in the area; between all of the washing stations and aspects of producing coffee RWH is able to employ over 5000 woman day workers during the coffee growing season. The lot we have from them is a fully washed coffee as is common from many washing stations and is made up of common varieties Bourbon, Caturra, and Catuai. This coffee specifically undergoes Pepe's Wave Washed processing method. This involves the coffee being initially fermented for a couple of days in cherry before it is then depulped. Next, the Wave part of the process allows the depulped coffee to ferment in a wave of temperatures to preserve the structure of the coffee. The coffee is then cleaned and dried in a dark temperature-controlled space for up to 30 days.
