This coffee specifically undergoes Pepe's Wave Washed processing method. This involves the coffee being initially fermented for a couple of days in cherry before it is then depulped. Next, the Wave part of the process allows the depulped coffee to ferment in a wave of temperatures to preserve the structure of the coffee. The coffee is then cleaned and dried in a dark temperature-controlled space for up to 30 days.
