Jose Jijon - Mejorado
Fincas del Putushio is a joint project between Jose, Pepe, and Francisco Vintimilla in Loja, Ecuador. The farm sits very high at 2222 masl contributing to the beautiful profile we see in the coffees produced there. At Putushio they exclusively grow Typica Mejorado and they only process it washed. The intention is to showcase the influence of terroir on the profile of the coffee. This lot is giving us some lovely jasmine-like florals, some sweet apple notes, and a touch of a butterscotch note.

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.
We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
