We believe it is best to have well-rested coffee. You will often receive coffee that is 1-2 weeks “off roast.” This is great and frankly, it still has time to rest. The more complex the coffee it is often the case that it should rest between 4-12 weeks, depending on the coffee. Of course, you can enjoy it immediately, we know it’s hard to wait!
You should receive an email confirming that your coffee is ready for pick up. Whichever cafe location you chose during your checkout, that is where it will be.
Short answer: all of our coffee is on the lighter side of the roast profile spectrum. The long answer: we try to honor the inherent profile of the coffee itself instead of imparting our roasting profile. Therefore, we use our senses more keenly during the roasting process and look (rather, smell) for specific acidic off gassing during the Maillard Reaction (development). This often can tell us when a coffee has reached its specific optimal development level. Which again, is somewhere in the “light roast” spectrum.
If you order between Friday-Sunday it is likely that your order will ship on the following Tuesday. If you order between Monday-Thursday it is likely that your coffee will ship that Friday. We can’t always guarantee these exact shipment times since we only carry a moderate inventory of backstock; as a company we value reducing as much waste as possible.
Honestly…this happens. And we actually don’t know why. We mainly ship with USPS and often times when there are route disruptions due to storms or whatnot packages from one main station will be re-routed to another station. Unfortunately, we can’t do anything about this. Once it leaves our facility with the correct shipping label it’s out of our hands. Just stay patient!
