Pepe’s Sydras are a gorgeous showcase of Ecuadorian coffee; the variety paired with the attention to detail at Finca Soledad results in quite the special cup. This coffee specifically undergoes Pepe's Wave Washed processing method. This involves the coffee being initially fermented for a couple of days in cherry before it is then depulped. Next, the Wave part of the process allows the depulped coffee to ferment in a wave of temperatures to preserve the structure of the coffee. The coffee is then cleaned and dried in a dark temperature-controlled space for up to 30 days. This coffee is expressing some sweet cucumber and pear-like profiles along with some gentle tea notes.

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.
We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
