Rarities: Finca La Josefina - Mejorado
Finca La Josefina sits on the Cayambe Coca Natural Reserve in Ecuador, making it an extremely beautiful place to grow coffee. The reserve is home to mountains, swamps, lakes, and hundreds of species. Leopoldo Andrade & Ligia Merizalde chose this as their optimal place to start La Josefina. We met Leopoldo at World of Coffee this year and after we cupped his coffees we knew we had to get this Mejorado. This coffee undergoes multiple stages of fermentation in and out of cherry before being finished with an Oxidation segment right before it's dried on raised beds. We're experiencing a flavor profile in this coffee that kinda hits exactly what we've been wanting in a coffee, its reminiscent of Green Apples, Grapes, and Plums.

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.
We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
