This coffee comes to us from the Rebuild Women's Hope (RWH) Cooperative on Idjwi Island on Lake Kivu neighboring Rwanda, Uganda, and Burundi just east of the Democratic Republic of the Congo. RWH is focused on fighting the inequalities women face in agriculture and stands on the belief that income controlled by women benefits community development in the area; between all of the washing stations and aspects of producing coffee RWH is able to employ over 5000 woman day workers during the coffee growing season. The lot we have from them is a fully washed coffee as is common from many washing stations and is made up of common varieties Bourbon, Caturra, and Catuai. The DRC is a fairly new Arabica producing country and we are very in love with the cup profile we have seen in coffees from here the last few years; this selection is reminding us of black tea, honeydew, and marshmallows.

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.
We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
