"Since my early barista days, I dreamed of working with Mexican coffees. As a proud Mexican-American woman roaster, this was something I was always working towards subconsciously.
I was absolutely elated when I found out we had the opportunity to work with Finca San Juan del Vesubio, a women owned farm in Yajalón, Chiapas, Mexico.
 
This coffee is produced by Elvira Trejo who is a fourth-generation coffee farmer. Her daughter Georgina Utrilla also works on the farm and runs her own roastery/cafe in San Manuel. This coffee is women-led from the beginning of the supply chain to the end. It is with great honor that I introduce this coffee to our lineup this year, to continue uplifting women producers and exploring Mexican coffees. ¡Provecho! " - Gaby (roaster and educator)

It's been a handful of years since we've featured a coffee from Mexico in our lineup, and we're thrilled to share this lot with you. This Bourbon variety is grown in the Yajalón region of Chiapas, in the southern most part of Mexico right against Guatemala. In this coffee we are seeing flavors reminiscent of Limeade, Chocolate Lava Cake, and Malic Acidity.

Brewing

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.

We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
