Rarities: Carlos Cadena - Gesha
Our second offering from Mexico this season comes from Carlos Cadena. Carlos is a fifth generation coffee producer in the Cosautlan, Veracruz region. His great-great-grandfather began coffee production in the 1890s, and was processing coffee cherries with wooden tanks. Carlos has been participating in the Cup of Excellence since 2012 and placed third in the 2023 and 2024 auctions. We are very excited to be offering this Natural Gesha from Carlos, in it we are seeing profiles reminiscent of Manzanilla, Agua de Pepino, and Strawberry.

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.
We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
