Rarities: Nepal - Sindhupalchowk
Nepal - It's hard to state just how rare this origin is. When one thinks of Nepal, one thinks of Sagarmatha (Mount Everest) and the as the "Roof of the World." But in the "foothills" there is potential to grow this typically tropical plant. The profile is not exactly what you think. It's quite rooted, deep, and complex; our tasting notes don't nearly do it justice.

In our shops we do all our hand brews on Origami brewers with the Origami conical filter. We follow a simple three pour recipe at a 1:17 ratio.
We do the majority of our initial QC through the cupping process. Once we have released a coffee we do further QC with our Origami hand brewing process. We often tweak things according to what the coffee is showing us. If you ever have questions about brewing, feel free to reach out to us!
