Words fail to describe how excited we are to share this coffee with you. We have admired Pepe's coffees for a handful of years and we are honored to be able share this beautiful Sydra from Finca Soledad! This Sydra undergoes Pepe's Wave Washed process. This process involves the utilization of various fermentation tanks and refrigerators to gradually shift the temperature of the coffee cherry, putting the coffee through a "Wave" of tempatures. The intention is to provide minimal strain to the living embryo within each coffee cherry. The coffee is then depulped, washed and dried on Finca Soledad's  shaded drying patios.
